Home made gnocchi

This delicious and filling recipe is easy to make and costs next to nothing to make.

Using left over boiled or roasted potatoes (without skin) mash in a bowl until fluffy. Add one egg and flour and create a dough. Add thyme and a pinch of salt to the dough then kneed on a floured service. Cut the dough in half and with floured hands roll out a sausage shape. flour your knife and trim off 1 inch sections.

Once all the gnocchi are cut place in boiling water until they rise to the service. This can then be cooled and stored or cooked fresh. In a frying pan add light oil or butter. Place gnocchi in the pan clockwise and turn over after about 2 minutes. Allowing the gnocchi to go golden. Add pepper and peas. Place on a plate and add shavings of Parmesan.
