The easiest eggs Benedict you will ever make and it’s low in fat but tastes as good as the real thing !
Toast two slices of brown or whole meal bread and add once slice of lean ham on each. In a shallow frying pan add boiling water and turn on a medium heat. Add two eggs to the water and Poach.
In a separate pan add 1tbsp of butter, 1tsp of mustard and 1tbsp natural low fat yogurt. Turn on a low heat and whisk once the butter has melted.
Place the poached eggs on top of the ham and pour over the sauce. Season with pepper and cayenne.
