I love lemon tarts, we have so many lemon trees here in Portugal. That it made sense to make one, after looking on the internet I was shocked I could only find recipes at 800cal per slice ! I’ll just not eat all day then………
This recipe is similar to one I found on good food but I’ve adapted it 🤗 ITS ONLY 186cal PER SLICE HURRRRRRRRRRAY
You can use pre made pastry puff or normal. I used puff pastry as I had it left over from a shop I did.
For the pastry rub 50g of butter with 120g of flour until it crumbs. Add 1 tbsp of icing sugar, 1tbsp of oil and a egg golf. Blend together and roll in to a ball. Roll out on a floured service to the size of your tin. Chill the pastry for ten minutes.
Place in the tin with baking parchment and baking beans , blind bake for 20-25 minutes. Remove beans and bake for a further 3-5 minutes.
For the filling whisk 3 egg yolks with 2 egg whites. Add the zest of 3 large lemons and the lemon juice. Allow to soak up lemon flavour while you beat 200g of half fat crème fresh in a separate bowl. Add the lemon and egg mixture slowly to the crème fresh through a sieve. Then stir in 140g icing sugar whisk to remove lumps.
Pour the 3/4 of the filling in to the pastry. Then add to the oven with the shelf half way out. Pour in the rest of the filling. Add to the oven and reduce heat to 150c. Bake for 25-30 minutes the filling should still wobble. Chill for an hour and can be served immediately.
